Chocolate Chip Peanut Butter Cookies

so the banana bread, the white chocolate macadamia nut cookies, the fudge bittersweet brownies and the chocolate bundt cake have all been devoured and/or given away so i needed to “fill the cookie jar”, so to speak (even though i don’t actually own one…. booo!). on top of the need to bake something sweet, i also didn’t want to go grocery shopping at all today so needed to find a way to do this with what i had left in the house. i’ve finally used up the giant club-sized bag of pecans i’ve been working away at and i’m clean out of walnuts so that leaves me with peanuts. i do like peanuts. so this leads me to thinking about peanut butter. i love peanut butter. what goes well with peanuts and peanut butter? chocolate! (sorry dad lol). peanut butter chocolate cookies!

Chocolate Chip Peanut Butter Cookies

these cookies are like a mix between your traditional “peanut butter cookie” (often flour-less) and a chocolate chip cookie. yummy! lots of chunky peanut butter, chopped peanuts and bittersweet chocolate chips. they are on the soft side for sure and not an overly chewy cookie. i normally like a chewy cookie but this is a nice change of pace! not overly sweet but enough to fill that craving. i have also found that these cookies are better the next day, once they are fully cooled (the peanut butter flavor will come through more). this recipe is adapted from one i found at

Peanut Butter Chocolate Cookies


  • 1 cup unsalted butter, cut into cubes
  • 1 1/2 cups packed light brown sugar
  • 2 eggs, at room temperature and beaten
  • 1 1/4 cup chunky peanut butter
  • 1 tsp vanilla extract
  • 2 3/4 cups flour
  • 1/4 cup cornstarch
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 tsp fine kosher or sea salt
  • 1/4 cup chopped peanuts
  • 1 cup bittersweet chocolate chips


  • preheat oven to 350 degrees F with rack in center position
  • cream sugar and brown sugar until light and fluffy
  • add half the eggs at a time, scarping down the bowl after each addition
  • beat in vanilla and peanut butter
  • sift together the flour, cornstarch, baking soda, baking powder and salt
  • add in the flour mixture a third at a time, scraping down the bowl after each addition. beat until nearly incorporated and remove from the mixer
  • mix in the chopped peanuts and chocolate chips

  • drop the dough in balls using a teaspoon or cookies coop onto cookie sheet, about 2 inches apart
  • flatten the tops of the cookie dough balls slightly because they do not flatten very much while cooking
  • bake for 12-15 minutes until edges are golden brown
  • remove from oven and allow to cool on racks for at least 10 minutes before transferring to wire cooling racks
